You have 36 days to bring a vegan food truck to Louisville

The good women (and couple of dudes) at the Let Them Tweet Cake meeting last night reminded me of a wonderful local food project that needs the community’s help to get off the ground.

Stanley Chase III wants to operate a vegan food truck in Louisville. Food trucks are trendy throughout the country, but have yet to find a home in Derby City. Morels Vegan Food Truck, named after Chase’s favorite mushroom, would not only bring Louisville into the mobile food loop, but it would also help diversify Louisville’s vegan meal options.

Chase is trying to raise $12,000 through the website Kickstarter, which you can check out here. According to the site, Chase will use the money to buy and paint the truck, obtain necessary licenses and permits, and buy food to get things going. Some of his planned dishes include garlic gourmet fries and buffalo seitan wings. I’m not even vegan, but I’d love to eat at Chase’s truck.

You can pledge as little or as much money as you choose to help Chase’s food truck come to fruition. There are different gifts he’ll give you depending on how much you pledge, such as coupons to the truck or a handmade scarf. If he doesn’t reach his $12K goal by January 21, 2011 at 12:01 a.m., you don’t have to pay him anything.

As of today, Chase has raised $2,946. Louisville, we can do better than that. Let’s help this guy out and add to our city’s food scene.
